Goujons of Plaice

This is fun food, great as a starter, canapé or a light snack supper, also a good way of using small pieces of fish.

Ingredients

  • 1 fillet of cod or plaice cut into thin strips (serve between six and eight as a portion.)
  • Panko breadcrumbs
  • 2 eggs
  • Plain flour

Method

  1. Beat the eggs in a large bowl, season the flour with salt and pepper, place the strips of fish into the flour, then dip into the egg, carefully lift out and coat with the breadcrumbs. Lay on a tray until needed.
  2. Heat a deep fryer to 180*c, fry the Goujons in the fryer for a few minutes until crisp and golden, season with salt and serve straight away with tartare sauce

Tartare Sauce

  • 3 egg yolks
  • 1 teaspoon Dijon mustard
  • 2 tablespoons white wine vinegar
  • 33ml sunflower oil
  • 1 table spoon chopped tarragon
  • 1 table spoon chopped Chervil
  • 1 table spoon chopped shallot
  • 1 table spoon chopped cornichon
  • 1 table spoon chopped capers

    Put the egg yolks, mustard and vinegar into a bowl, whisk well and in a steady stream slowly add the sunflower oil, then as the emulsion becomes stronger you can add more quickly, season with salt and pepper and then add all the other ingredients.
